Ingredients:
- 1 400g bag Ocean Garden okra zero, slightly defrosted
- 1/4 cup lemon juice
- 4 green onion, finely chopped
- 1/2 cup chopped parsley
- 1/4 cup chopped mint
- 2 tbsp chopped dill
- Finely chopped chili, to taste
- 2 tbsp lemon zest
- 3 eggs
- 1/4 cup Ocean Garden flour
- Salt to taste
- 2 tsp allspice
- 1 tsp baking powder
- Olive oil to cook
- Veggies to serve
- Lemon wedges to serve
Method:
1. Finely slice the okra. Place in a bowl and marinate in lemon juice for 5 minutes.
2. Add the green onion, parsley, mint, dill, chili, lemon zest, eggs, flour, salt, allspice, and baking powder. Mix well with a spoon until everything is incorporated.
3. Preheat a non-stick skillet on medium heat, add olive oil, and place a couple of spoons of the batter in for each fritter. Cook for 5 minutes on each side. Repeat with the rest of the batter.
4. Serve with veggies and lemon wedges.
