Stick wooden skewers into apples at stalk end about halfway through. Take care they go in straight.
Rinse apples under cold running water and stand on wire rack to dry. Do not wipe apples dry, they must be completely dry before coating.
Put sugar, white vinegar, water and liquid glucose into a large saucepan and stir over a low heat until sugar dissolves.
Bring to the boil and boil without stirring until it turns a pale honey color. Toffee will make a cracking sound when ½ teaspoon is tested in cold water.
Remove from heat and allow bubbles to subside.
Stir in the food coloring.
Tilt saucepan to one side and swirl apples in toffee, taking care to coat completely.
Remove apples from the toffee and twirl in a jug of cold water to set toffee. Place onto prepared tray.
